A guided tour to a fair trade cooperative in Modica, Sicily. Quetzal unites local ingredients with the age-old secrets of chocolate processing. A tasting is included.

The Quetzal cooperative has been active in Modica, Sicily, for the past 20 years, as a shop, as a reference point for citizens interested in fair trade products and fair planet themes, and as a creative chocolate laboratory.
The visit to the cooperative allows you to discover a chocolate workshop dedicated to uniting local raw materials (organic and fair trade) (carob, oranges, hazelnut, hemp, manna, spices, chili ...) with the traditional cocoa processing techniques. Modica is connected through a long history to the Mayans and Aztecs - a story that began when the Spanish brought the Xocoatl recipe during their occupation of Sicily.
The visit takes you into the fair trade shop of the cooperative Quetzal and into its chocolate laboratory premises, where you’ll learn about the manufacturing process and the machines used. And you will discover some secrets of chocolate making ...
Of course, the tour ends with tasting some of the sweet delights produced here!
